Getting Started

Getting Started NOTE: WE WILL ALWAYS KEEP THIS POST PINNED TO THE TOP SINCE WE GET MORE REQUESTS FOR THIS THAN ANY OTHER. So be sure to look immediately below for more RECENT posts! When my husband and I started this journey, we used Atkins for our foods and our online free tracker because at the time we just weren’t that familiar with Keto yet. We learned that Atkins is basically the grandfather of Keto and it was easy to use both as references, still is. So I am linking both food lists / meal plans for the first two Read More ...

Burning Carb Bridges

It has now been over four years since we started our low carb (later went straight-up Keto) journey. Both of us were over 65 when we started. By all accounts–and statistics–we should have had a horribly hard time succeeding at something this “radical” and this new to us at our age. But truthfully, we had already tried everything else. And I do mean EVERYTHING else. Richard Simmons, Susan Powter’s “Stop the Insanity,” Weight Watchers (I am a bona fide Lifetime Member since I tried it numerous times and earned that distinction one of those times before it stopped working and Read More ...

Non-Scale Victory Report–WITH PICTURES!

Ok, this is a YUUUUGE non-scale victory for both of us. I will try to keep it short, but for you to completely understand the enormity, I do want to elaborate a bit. Several years ago, while still eating carbs and seed oils, my husband developed what the doctors could only diagnose as some kind of psoriasis. Sometimes it was on the trunk of his body, but mostly the worst place was his hands. It literally became debilitating. And excruciatingly painful. He gave his guitar to our granddaughter because he could no longer play. He would ask me to button Read More ...

JQ’s on High in Jefferson City

JQ’s on High in Jefferson City It’s so exciting to finally be able to add a BBQ eatery in Jefferson City that does not sugar coat all their meats: JQ’s on High in Jefferson City. Thanks to one of our Facebook group members for sharing this info with us, we started ordering their pulled pork by the pound (which is seasoned with a Keto rub) then shredded, we bring it home and make nachos and add all our own toppings and pork rinds. BUT, you can actually order the Pork Rind Nachos already topped with your fave stuff at the Read More ...

(A) Opinions vs. (B) Results–I’ll pick (B) please!

This journey before we came across Keto was a long and winding road. A few times we pretty much just fell off a steep road onto the craggy rocks below that left us bruised and battered. And much less healthy. Since we are considered “seniors” we have had plenty of years behind us, which means we have tried everything. Weight Watchers (both joined, and I even am a “Lifetime Member”), Nutri System, The Daily Plate (now called LiveStrong), the DASH Diet for diabetics, and a myriad of other fad diets that came along over the past 40 years or so Read More ...

Re-Roasted Rotisserie Chicken

Re-Roasted Rotisserie Chicken

Re-Roasted Rotisserie Chicken This is perfect for a lazy–or super busy–day when you need a home-cooked KETO meal but don’t have the time to cook! INGREDIENTS: 1 or more rotisserie chickens from your favorite supermarket (1 chicken feeds 2 people) Any spices you’d like to add (including fresh-ground Redmon’s salt) THAT’S IT! Told ya it was easy! INSTRUCTIONS It makes it easier to handle the chicken if you put it in the fridge to chill down first. Then using your biggest, baddest knife, split the chicken lengthwise right down the middle. Add some fresh-ground Redmond’s Real Salt into the INSIDE Read More ...

Gen Carbers

Gen Carbers The following is personal opinion based on research, personal experience, and lots of inner prayerful reflection. So please take it as such. We are Boomers. Our daughter is  Gen X. Followed by Millennials. And then our granddaughter is considered Gen Z. Every generation seems to have its own designated label. There is a generational identifier that actually crosses all those barriers. Gen Carb. In the last several decades we have watched ALL our nation’s generations battle the same health issues, many of which can be traced back to the escalation of one thing: carbohydrates (a/k/a SUGAR after broken Read More ...

A day in the life of a quarantined Keto-er

A day in the life of a quarantined Keto-er Well, not exactly “quarantined,” but rather “sheltered-in-place.” But you all know what I mean. When I stopped to think about it, this is a pretty accurate account of how my day went yesterday. It was a GOOD day! So I think I may just repeat a lot of it today. Especially the coffee, Word, and napping parts. KETO ON, my friends…no matter what! Have coffee and the Word. Lots of coffee, and lots of thinking about the Word I was listening to on my Tablet while I coudn’t sleep the night Read More ...
